Fattoria La Vialla: Living with Nature

Be more than seem – This is exactly what makes the largest company in biodynamic agriculture in Europe very special. The Fattoria La Vialla in Tuscany is one of the exceptions in today’s time, in which a lot is promised and only a few kept. Appearances are all too often deceptive. But everything is authentic here. At first glance, the Fattoria La Vialla is a huge, 1400 hectare site with lots of greenery, with 33,000 olive trees and 33 hidden residential units on it. It’s almost like a small village. The Fattoria La Vialla was founded in 1978 by Piero and Giuliana Lo Franco. It was built on the ruins of derelict farms that have been lovingly restored. Self-catering holiday at the Fattoria La Villa The individual and very cozy accommodations are rented during the season from March to October to guests who want to get to know farm life and the in-house products from biodynamic production of bread, cheese, sausage, lamb, chickens, eggs, pesto, olive oil and wine and want to enjoy Cantuccini. Everyone who lives in one of the “Podere” or the picturesque “Torre” has to take care of himself. You can get the delicious groceries in the farm shop. Freshly baked bread is served every morning from 9.30 a.m. Only what is produced on the farm is sold in the „Hofladen“. If you want to cook yourself, you can book one of the tables in the idyllic courtyard and let yourself be pampered in Tuscan style. You can also order all the La Vialla groceries online. Sustainability in practice The Fattoria La Vialla follows biodynamic agriculture. That is a step further than biological. Organic is the cultivation without fertilizers, natural cattle breeding without hormones in the feed. Biodynamic, however, means that everything is fed back into the natural cycle. The plants are not changed, but supported in their natural way of life. The olive trees from biodynamic cultivation have for example 20 percent more polyphenols than those from organic farming, because they have to protect themselves against attacks from the environment. Tested for you: La Vialla’s OliPhenolia Bitter

The Fattoria La Vialla is located in one of the most beautiful spots in Italy, in Tuscany. The more than two hundred year old farm was saved from deterioration in 1978 by the Lo Franco family and rebuilt.Today it houses a certified organic and biodynamic family farm on 1,400 hectares. Wine, olive oil, cheese, antipasti, sauces, pasta and sweets such as cookies and honey are produced (on the largest Demeter-certified area in Europe). And last but not least, the biodynamic olive cosmetics made from OliPhenolia, which also includes a dietary supplement, OliPhenolia Bitter. Polyphenols, the most valuable from the olive I was particularly interested in this OliPhenolia product. The bitter from an olive extract and, of course, natural lemon juice lives up to its name: very bitter. Especially in the morning on an empty stomach, it should always be taken away from meals in the morning and evening, it really bothered me in the first few days. But the little jars of 25ml each are emptied quickly and I soon got used to the bitter olive taste. What is contained in it is an olive water extract, which is created during olive pressing. Actually a waste product, but it is particularly rich in polyphenols. OliPhenolia is obtained through a special extraction process developed by the two Italian doctors Daniel and Massimo Pizzichini. There is more than 50mg(!) of hydroxytyrosol in one glass. The phytocomplex therefore contains such a high concentration of oxidation-inhibiting molecules that it is difficult to consume even in a balanced diet. Antioxidants – why we can’t do without

A topic that is in the truest sense of the word brand new in these sunny months: free radicals and their antioxidants. Even without sunburn, UV radiation can create huge amounts of free radicals in the skin. In order to combat these extremely aggressive cell destroyers effectively, antioxidants from the inside and outside are required. If we would qualify free radicals exclusively as “bad”, that would be wrong. It is not for nothing that the body produces it itself during various metabolic processes. He needs them, for example, so that the immune system can keep bacteria, viruses or inflammatory press under control. Normally, the human body’s defense mechanisms are equipped to deal with a certain excess of free radicals. But our modern lifestyle is overwhelming. In addition to UV radiation, alcohol, smoking, the inhalation of environmental toxins and even blue light from smartphones, tablets and the like all promote the formation of these molecules that damage the cells. The chemical structure of these oxygen-containing molecules is unstable because they lack an electron. In their search for a replacement they are extremely aggressive and extremely fast. It only takes 10-11 seconds (0.000 000 000 01 seconds) to find a suitable binding partner. They snatch the required electron from this intact molecule, which can be from the cell membrane, from a protein or from DNA. This electron robbery is known as oxidation. A chain reaction starts. The stolen molecule is now also a free radical and is looking for a victim. The higher the concentration of these killer molecules, the more massive the oxidative stress and the damage in the body. Depending on which molecules are affected, cell functions are impaired, and if the membrane is damaged, even cell death occurs. With DNA damage, uncontrolled cell division (development of cancer) is the result. And much more. Cosmetics companies are increasingly relying on care products with bacterial cultures. The so-called probiotics are supposed to bring problem skin back into balance by balancing the “good” and “bad” bacteria. Probiotics are known from the grocery store. These living microorganisms are found especially in yoghurts and fermented foods such as sauerkraut. Their main task: They ensure a healthy intestinal flora. And now we should smear it on our faces! Sounds a bit disgusting at first. But of course there are no living organisms in the cream jar. “They are prepared beforehand in the laboratory and incorporated into the texture in a dissolved form,” explains Britta Klebon from the L’Oreal research department. The microbiome in the focus of science The word probiotic comes from the Greek and means something like “for life“. And that is pretty much the case, because probiotics in their original form are living microorganisms. We know about 400 different probiotics out of an estimated 40 trillion bacteria that are mainly on the mucous membrane of the large intestine. The most well-known are the lactic acid producing bacteria, which are called lacto- and bifidobacteria, and keep the intestine healthy. However, this finding is not new. As early as 1908, the Russian bacteriologist Ilja Metschnikow received the Nobel Prize in Physiology and Medicine for discovering that the lactic acid bacteria in yoghurt can support our immune system and fight pathogens in the human gut. The term “microbiome” is newer, and research into it has now become the focus of research after decoding the genome. It describes the entirety of all microbial roommates, including their habitats and ecological functions. It was shaped by the US molecular biologist Joshua Lederberg, who died in 2008. Decoding the microbiome is a mammoth task for science. The human body serves the diverse microbes (bacteria, viruses and fungi) with a total weight of up to 1.5 kg as a complex ecosystem. This primarily includes the bacteria in the intestine, but also those in the skin, urogenital tract, mouth, throat and nose. “What makes the evolution of microbes so fascinating and at the same time so worrying is their combination of huge populations with intense fluctuations within these populations,” Lederberg wrote in 2000. Ayurveda – Well suited to Everyday Life

Tips on how to practice easily at home and how to stay healthy through the winter I can already hear the comments: “Oh, Ayurvedic living is so complicated!” But is it really? We asked Carina Alana Preuß, managing director of the Ayurveda Parkschlösschen in Traben-Trarbach. The 32-year-old, who grew up in an Ayurvedic environment, has been managing the 5-star establishment since last year. 25 years ago, her parents founded the first address for Ayurveda in Germany. Carina glows, inside and out, and whoever meets her is immediately drawn to the Ayurvedic way of living. She conveys her message with great passion and freshness and her expertise as an Ayurveda expert and yoga teacher is more than convincing. In order to make this ancient Science of Life (the meaning of the term “Ayurveda”) even more accessible and approachable to greater number of people over and beyond the classic Panchakarma cure offered at the hotel, she also makes use of various social media channels. She has, for example, developed an online course that is quick and easy to navigate, even for beginners. It is obvious from her online blog that she is the best example of a lived Ayurvedic lifestyle. A mentor in matters of contemporary Ayurveda, someone who knows what she’s talking about and who takes it very seriously. Living in the here and now, however, she does occasionally treat herself to French fries. Is Ok for an Ayurvedian to eat French Fries? Carina Alana Preuß: Exceptions and being undogmatic are part of Ayurveda. It’s just a question of being sensible about it. After indulging in a portion of French fries for example, it’s best to take Triphala (an Ayurvedic herbal formula that helps digestion). Or after a late night and a heavy dinner, one can skip breakfast or have a soup day. If I don’t want to get too carried away, sweet potato slices baked at home with salt, curry powder and oil are my healthy alternative to frozen foods and deep-frying in oil. Everyday hotel life, further training, constantly on the go – how do you manage to stay in balance? That’s a very good question. I really do invest a of energy in my endeavors to one day make the world a healthier and more awareful place. My diary may sometimes be bursting at the seams, but my food is sacred to me.
